Subscribe Me (YouTube LINK).  一起附上蛋黃酥做法(無水奶油版)的完整影片。 如果喜歡,請幫我訂閱一下YouTube頻道(點我即可連到YouTube),感謝。 蛋黃酥(無水奶油版)材料 Ingredients of Yolk Pastry (Clarified Butter) 材料: 蛋黃酥10個 a.內餡 紅豆泥…250g 鹹蛋黃…10個 b.油皮 糖…17g 無水奶油…42g 中筋麵粉…117g 水…55ml c.油酥 低筋麵粉…100g 無水奶油…50g d.表面裝飾 蛋黃…1個 牛奶…1ml 芝麻…少許 Ingredients of Yolk Pastry (Clarified Butter) 10 ea Yolk Pastry a. Filling 250g Red Bean Paste 10 ea Salted Egg Yolk b. Water Dough 17g Sugar 42g Clarified Butter 117g All-purpose Flour 55ml Water c. Oil Dough 100g Cake Flour 50g Clarified Butter d. decoration 1 ea Egg Yolk 1 ml Milk a little Sesame 蛋黃酥做法 (無水奶油版) Yolk Pastry (Clarified Butter) Recipe 秤紅豆沙揉成團,每份25g,接著把鹹蛋黃包進去紅豆沙中,再蓋上保鮮膜放入冰箱備用。 Then, wrap a salted egg with 25g red bean paste. Cover it and refrigerate. 接著來做油皮,先把糖及無水奶油混合,再加入過篩後的中筋麵粉,加水後揉成團,蓋上保鮮膜鬆弛30分鐘。 We can make the water dough now. Mix well sugar with clarified butter, then add sifted all-purpose flour and water, and knead it. Then, cover it and wait for 30 minutes. 再來就是做油酥,將無水奶油及過篩後的低筋麵粉混合均勻, 用保鮮膜包起油酥放入冷藏備用。 I’d like to make the oil dough now. Mix clarified butter with sifted cake flour, and knead it. Then, cover it and refrigerate. 把油皮分成每個22克的小麵團,油酥分成每個15克的小塊。把油酥包進油皮裡面後,桿長後捲起,放入保鮮膜鬆弛15分鐘;再桿一次,再捲起放入保鮮膜鬆弛15分鐘。 Separate the water dough for every 22g and oil dough every 15g. Wrap the oil dough with water dough, flatten and roll up, and cover and wait for 15 minutes, then do it again. After that, cover it and wait for 15 minutes. 再把剛剛包好的紅豆蛋黃內餡包入麵團中。 Wrap the filling with the dough. 烤前先刷兩層蛋黃液,撒上芝麻。再放入已預熱烤箱,180C,40分鐘。(中層先烤25分鐘,拿出來再刷一次蛋液,再放入上層烤15分鐘) Brush the egg yolk liquid on the top and add some sesame. Baking in a preheat oven, 180C, 40 minutes. 這樣子蛋黃酥就完成囉~ Enjoy.
